In the Kitchen: Cheesy Baked Grains

Recipe:

Cheesy Baked Grains (Serves 6)

  • 3/4 cup of uncooked quinoa
  • 3/4 cup of uncooked bulgar
  • 1/4 cup of half and half
  • 1/3 cup of skim milk
  • 8 oz. of very sharp cheddar cheese, shredded
  • 1/4 cup of whole wheat, seasoned bread crumbs
  • 1/8 tsp of salt
  • 1/4 cup of freshly grated parmesan cheese
  1. Cook quinoa and bulgar according to package directions
  2. Once the grains have roughly 10 minutes left of cooking time, in a medium saucepan and the half and half and milk, bring to a simmer with the salt, once simmering add the cheddar cheese in small increments, stirring to melt and combine the cheese with the milk and half and half
  3. When done cooking, drain the grains in a fine strainer
  4. Once all the cheese is added and a smooth sauce forms, thick enough to coat a spoon add the cooked grains and combine until it is coated with the cheese sauce
  5. Place in a greased 8×8 baking pan and top evenly with breadcrumbs and parmesan cheese
  6. Cover with foil and place in a 350 degree oven for 30 minutes
  7. Uncover after 30 minutes and place under the broiler for 3-5 minutes or until top is browned
  8. Let sit for 15 minutes and serve
