(WTNH) — Haddam-Killingworth High School culinary arts teacher Joanna Siciliano demonstrates how to make chicken taquitos.
Recipe: Exploding Chicken Taquitos
- 2 Cooked Chicken Breasts Chopped
- 1 Can Black beans drains
- 1 can corn drained
- 1 avocado chopped
- 2 limes freshly squeezed
- Salt and pepper to taste
- Corn tortillas
- 1-8oz package Shredded cheddar cheese
- Grill the chicken and season with salt and pepper. When fully cooked chop to bite size pieces. In a bowl combine black beans, corn chopped avocado and chicken. Squeeze two limes over mixture add salt and pepper and stir. Let sit for about ½ hour to really soak in the lime juice.
- Preheat skillet to 350 degrees. Spray with pam cooking spray place your corn tortillas on skillet and warm one side flip the tortilla sprinkle with cheese allow the cheese to melt take a heaping tablespoon of the chicken mixture and place it down the center of the tortilla in a line. Take the sides of the tortilla and place one on top of the other and hold for a few seconds until cheese sticks the tortilla sides together. Let the chicken taquito sit on the skillet and crisp up a little bit. EAT AND ENJOY!
