In the Kitchen: Nutritious Asparagus

WTNH— Chris Holden from the Middletown Kids Health and Safety Day Committee and his daughter Lindsey talk Kids Health, Safety and Nutrition and teach us how to make nutritious asparagus.

For the past 20 years this organization has been providing information regarding health and safety resources to the children and caregivers in the greater Middletown area.

The Middletown Kids Health and Safety Day will be held on June 14th.

Chris’ Nutritious Asparagus Recipe:

1 Bunch of Asparagus
3-4 Cloves of Garlic
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Balsamic Vinegar
1 cup low fat parmesan cheese grated
Salt and pepper to taste

Wash and snap the asparagus.  Place in a glass baking dish.  Add the garlic, EVOO, and balsamic vinegar.  Toss together.  Place the grated cheese on top and bake at 400 degrees for 20 minutes.
