In the Kitchen: BBQ Buffalo Bison Sliders

Serves 10

8 oz Buffalo Blue Kettle Chips, crushed
1 lb. ground Bison or other Buffalo meat
4 oz crumbled Blue Cheese
1 Tsp cracked Black Pepper
Dash of Red Pepper Sauce (optional)
Mini Slider Buns or other individual Dinner Rolls
2 Pickled Green Tomatoes or Dill Pickles sliced thick

4 oz Nonfat Greek Yogurt and Honey
Pinch of Ground Cumin
Pinch of Sea Salt
Pinch of Season Salt

Stir all ingredients together in small bowl. May be made two days in advance and kept refrigerator.

Preheat grill or grill pan on medium-high heat
Crush potato chips in the bag by popping air holes and then using a pastry roller. Pour pieces into a large mixing bowl.
Add ground bison meat to the bowl.
Add crumbled blue cheese
Add black pepper and hot sauce.
Mix together with your hands and roll into 1 inch balls about the size of a golf ball.
Press beef flat into a “mini burger” shape using a slider press or the tops of two yogurt cups.
Place on hot grill about three minutes on each side for medium-well.
Toast open buns on grill
Spread aioli on both sides
Add sliced green tomato and cooked burger
Top with bun and spear with toothpick
Serve Hot!
