The Cheese Truck was founded in 2010 by brothers Jason and Tom Sobocinski as a way to promote Caseus Bistro and spread the love for all things cheese. The truck has flourished at local farmers markets, serving to students on the streets, and private parties. Today the truck is run by Chef’s William Wallen and Adam Major.

Caseus Cheese Truck Grilled Cheese Recipe:
The Caseus Cheese Truck grilled cheese is a stove top grilled cheese (as opposed to their Bistro grilled cheese which is finished in the oven) made on artisan bread from Whole G bakery in New Haven, CT.
Cheese blend (shredded provolone, swiss, muenster, cheddar, gouda, comte, reclatte)
Bread (any style will work, but you want thinner slices for stove top)
Toppings (anything you want on your sandwich!)
1. Butter your pan or griddle
2. Lay down slices of bread, open faced
3. Pile each piece of bread with shredded cheese
4. Add any toppings to your sandwich
5. After about 2-3 minutes or once your cheese gets real melty, put the two sides of the sandwich together.
