In the Kitchen: Healthy Smoothies

WTNH– Food blogger of “Healthy. Happy. Life.” and cookbook author  Kathy Patalsky shows how to make healthy smoothies.

She brings a trio of summer smoothies for a healthy happy summer, featuring recipes from her book “365 Vegan Smoothies” and her website Lunchboxbunch.com / Healthy Happy Life. For a healthy habit,  Patalsky says a smoothie a day. She shuts off all phones, computers and just enjoys her smoothie and some chill-out time for 20 minutes a day.

Directions for all smoothies: Combine all the ingredients in a blender and blend from low to high until frosty smooth.

1. Kathy’s Famous Trinity Shake (with Turmeric)
1 ½ cups frozen watermelon chunks
1 ½ frozen bananas
¾ to 1 cup soy milk (or any non-dairy milk)
1 tsp turmeric powder (Ojio brand used)

boost it: 1 scoop vegan protein powder

2. Chocolate Peanut Butter Dreams
1 – 2 ½ Tbsp salted peanut butter
2 tsp cacao powder, unsweetened
2 fresh or frozen bananas
1 cup vanilla soy milk
maple syrup or agave syrup to taste to sweeten (optional)
pinch of ground cinnamon

3. Kale Sunshine Refresh
½ cup non-dairy milk (soy or almond)
½ cup fresh orange juice
1 ½ cups kale leaves
1 cup mango chunks (fresh or frozen)
1 banana (fresh or frozen)
½ cup ice (optional)
(Add water or more juice to thin out as desired)

boost it: 1 tsp chia seeds

4. Blueberry Beginning

1 cup fresh blueberries
1 frozen banana
1 cup vanilla soy or almond milk
2 Tbsp fresh mint leaves, chopped
1 tsp chia seeds
½ cup ice

boost it: 2-3 Tbsp vegan yogurt
