Food Truck Friday: Whey Station

(WTNH)– Chef /owner Jillian Moskites and owner Josh Moskites from the Whey Station show us how to make bacon marmalade.

They started out over three years ago and have spent years working in the specialty food and cheese industry. Jillian also has a culinary degree. They decided to do a food truck in lieu of a restaurant due to their growing family of 4 kids under 7.

The food truck will be at Roc race at Rentschler Field, all the shows at the Xfinity Theater in Hartford, Mohegan sun rooftop parties and shoreline wine festival at Bishops Orchard.

3 pounds bacon
4 large yellow onions, sliced
8 cloves garlic, chopped
3/4 cup cider vinegar
1/4 cup packed light-brown sugar
1/2 cup pure maple syrup
2 tbspns instant coffee powder
Salt and pepper to taste

Chop up bacon into 1″ strips. Render down. Remove some of the drippings while retaining 1/4 cup. Add sliced onions and garlic and cook until soft. Add liquids, brown sugar, and coffee powder. Cook uncovered, stirring frequently. If the mixture gets too dry add water. Cook until onions are broken down and soft. About 45 minutes. Using a food processor or stuck blender process mixture until spreadable but still chunky.
