(WTNH)– The Singing Chef Neil Fuentes and CLASP President Tracy Flood show us how to make Mahi Mahi with a Smoked Tomato sauce.
Neil Will be the Celebrity Chef for The Taste of Westport which will benefit Clasp, a non profit organization that provide support to people with autism and developmental disabilities so that they may live meaningful and rewarding lives – filled with friendship, learning and opportunities to grow. They will engage and inspire our local community members to partner with them and recognize that all will benefit from these relationships. Taste of Westport is May 7th 2015 at the Westport Inn.

2 Filet of Mahi Mahi or your favorite Fist
2 medium tomatoes
4 cloves of garlic
1/2 cup of olive oil
1/2 cup of white wine
1 cup of chicken broth
Salt and pepper to taste
1/4 cup of chopped green onions
1/4 cup of bell pepper (red or green), chopped)
1/4 cup of tomatoes, chopped
1/4 up of sweet corn
1/2 tsp of minced garlic.
Place some oil in a frying pan for the fish. Once the oil starts to smoke, season the fish with salt
and pepper and fry for 2 minutes one one side, turn and place in a 500 oven for 3 minutes. Set aside.
Place another frying pan on medium high heat, add the bacon and a little bit of olive oil. Once the
bacon is starting to get crispy, add the tomatoes and then the garlic. Cook for about 5 minutes, add
the wine and the chicken broth and cook for another 10 minutes. Place the mixture in the blender.
Strain and set aside.
On a small sauté pan add some olive oil, garlic, onion, tomato, peppers and corn. Sauté on medium heat
until veggies are softened. Add the sauce.
Serve by plaving the fish on the center of the plate and bathe with the sauce.
