In the Bender Kitchen: Dishes for your Kentucky Derby and Mother’s Day Soiree

 

NEW HAVEN, Conn. (WTNH) – Mother’s Day and The Kentucky Derby are both next weekend, so why not throw a party to celebrate both? Angela Baldanza, owner of Baldanza in New Canaan, shares a recipe sure to please.

Wild smoked salmon Tartine

  • 1 pc of tuscan or country bread toasted with olive oil and herbs of choice
  • 2pc of wild smoked salmon trimmed into ½” slices
  • ½ of a cucumber sliced on mandolin as thin as possible
  • 1 small watermelon radish sliced thin on the mandolin
  • Micro greens
  • Salt and pepper
  • Lemon olive oil
  • Prepare the bread by brushing olive oil and fresh chopped herbs such as rosemary ,parsley and thyme.
  • Bake in an oven on broil for 2-3 min until tasted through or do on the grill.
  • Place the salmon and cucumber on the bread alternating the salmon and cucumber to make a pattern.
  • Top off with micro greens and watermelon radish. Sprinkle with lemon olive oil and top with sea salt and fresh cracked pepper.

Roasted beet and avocado Tartine

  • 1 pc of tuscan or country bread toasted with olive oil and herbs of choice
  • 1 red beet roasted until soft and sliced thin on the mandolin
  • 1 avocado pitted and sliced thin
  • 1 small watermelon radish sliced thin on the mandolin
  • Micro greens
  • Salt and pepper
  • Lemon olive oil

Prepare as above alternating the avocado and beets
