WALLINGFORD, Conn. (WTNH) — In this week’s Working for Connecticut, we take a visit to the food truck industry.
Gulf War veteran Daniel Lanigan runs the Pig Rig BBQ in Wallingford. “After high school, I went into the Army. Went into the first Gulf War. When I returned home, had very little applicable skills. Almost became a golf pro through osmosis. Then I built a food truck, that’s where it all began,” Lanigan explains.
“My dream was always to run my own business,” Lanigan said. “This was never planned but has really, the moon and the stars aligned. The most challenging industry I’ve ever had anything to do with.”
On the day News 8 visited, Lanigan says they were planning to pull nearly 200 pounds of pork.
For him, it’s all about the customers, “I’m very customer oriented. I love people. Being able to create a product that people really want and they are rooting for you.”
