NEW HAVEN, Conn. (WTNH) – Chef Riccardo Mavuli of Gusto’s Trattoria is in the Bender Kitchen with the perfect Mediterranean spin on a swordfish recipe.
Swordfish Mediterranean Recipe:
- Grilled or pan sear the swordfish. Salt the swordfish lightly with gray salt or sea salt with a touch of extra virgin oil .
- Pre cook. Sardinian couscous , just like pasta . Sauté the couscous with shallots , peas and a touch of proseco
- For the sauce : sauté a little chopped garlic , a few smashed capers and diced tomatoes. Toss lightly and place the couscous on the plate and swordfish over it and finish with the Mediterranean salsa
