This is a rich soup but easy to prepare and can be served as a main dish for lunch or as a first course for dinner or informal family gatherings.  It is so good even people who claim they hate broccoli love it! It will also please the vegetarians in your life since it can be made with vegetable stock too.

Broccoli is part of the Brassica family, and is considered a cruciferous vegetable. Along with cabbage, Brussels sprouts, cauliflower and kale, broccoli is known for its high concentration of sulforaphane, a sulfur-containing compound with disease-fighting capabilities. It is considered a nutritional heavyweight because it is so rich in vitamins, minerals, dietary fiber and phytonutrients.
