“The fall is pumpkin time! You’ll usually find my pumpkin soup being offered at Café Allegre this time of the year. In Italy, my grandfather used to plant pumpkins for cooking and to feed the animals. When these pumpkins, cucozze, had fully matured, we made pasta e cucozza, pasta with pumpkin, and pumpkin soup. We also made torte di zucche, pumpkin pies. My grandfather saved the seeds and planted some the following year. The rest of the seeds were dried in the sun and eaten with wine around the fireplace. We used pumpkins to feed the rabbits, and chickens too. Nothing was wasted!”
