NEW HAVEN Conn. (WTNH) — What better way to get in the holiday spirit than by making food to share with your friends and family.

Debbie Barbiero stopped by our station to talk about how to make monkey bread and Gluten-free and Vegan “turkey”.

Turkey Food Art with Quinoa Salad Directions:

  • 2 cups cooked quinoa
  • Juice of 2 lemons
  • 2 garlic cloves peeled, crushed
  • 2 Tbsp. chopped red onion
  • 1 cup fresh basil, chopped
  • Pinch of fresh thyme
  • 1 tsp. fresh parsley, chopped
  • Pinch of Sea salt and pepper
  • 1 Tbsp. olive oil

Turkey Food Art with Quinoa Salad Instructions:

  1. Mix all ingredients together to make a salad.
  2. Lay the kale down to put the face on.
  3. Use your favorite colorful vegetables to make turkey feathers. Lay them over the
  4. You can use rainbow carrots cut in half for the eyes.
  5. Lay the kale down to put the face on.
  6. Then place red peppers on the bottom to make the claws of the turkey.

Garlicky Broccoli Monkey Bread Ingredients:

  • 2 garlic cloves crushed
  • ¼ tsp. Sea salt
  • 5 Tbsp. coconut oil, melted or Avocado oil
  • 2 (1 pound) loaves of pizza dough (If using frozen, thaw it first)
  • 1 cup of chopped, cooked broccoli
  • ½ cup grated Parmesan Cheese
  • ¼ cup mozzarella cheese, shredded
  • Optional: ½ to 1 cup sundried or chopped fresh tomatoes
  • Optional: Fresh oregano or rosemary
  • Optional: Try a different cheese such as cheddar or Swiss

Garlicky Broccoli Monkey Bread Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 10 inch Bundt pan or tube pan with coconut oil or avocado oil. Or you can make Mini Monkey breads by using muffin pans.
  3. If you are using broccoli or spinach chop it very small. Boil the vegetables for just a minute. Drain. Sauté the vegetables in coconut oil or Avocado oil with crushed garlic. Season to taste with salt and pepper.
  4. Break the bread dough off in walnut-sized pieces. Stuff each of the dough pieces with a little of the broccoli mixture and a little cheese.
  5. Place coated dough balls into the prepared pan. Once there is a layer of balls covering the bottom of the pan, sprinkle with Parmesan cheese or your favorite cheese. Repeat, sprinkling each layer with cheese until everything is in the pan. Cover loosely, and let rise until doubled in size, about 45 minutes. If you are using muffin pans, put two dough balls in each. You can make them look like a mini calzone or pierogi by pinching the edges to seal in the filling. Drizzle just a little oil over the balls before putting them in the oven.
  6. Bake for 30 minutes in the preheated oven, or until golden brown.

Cream Cheese Stuffed Monkey Bread Ingredients:

  • 2 lbs. dough or biscuits cut into 1 to 2: pieces
  • 1 package cream cheese, cut into small pieces
  • Chocolate chips
  • 2 tsp. Cinnamon
  • 1 cup White sugar
  • 1 cup Brown Sugar
  • ½ cup Butter
  • Optional: dried raisins, cranberries, chopped apple, dried figs or dates, chopped nuts

Cream Cheese Stuffed Monkey Bread Ingredients:

  1. Separate dough into pieces.
  2. Wrap dough around cream cheese and chocolate chips, raisins or whatever fillings you choose.
  3. In a baggie add 1 cup of sugar and 2 tsp. of cinnamon. Shake to mix. Add the filled balls and shake to coat.
  4. In a sauce pan on medium low combine 1 cup brown sugar and ½ cup of butter.
  5. Spray or grease bunt pan. Sprinkle chopped nuts lightly on the bottom. Add cinnamon coated balls. Drizzle melted brown sugar and butter to glaze over the balls. Repeat with layers until the pan is full.
  6. Bake 30 to 35 minutes at 350 degrees.
  7. Cool 10 minutes. Use a plate big enough to invert and dump the Monkey bread.
