Chef Silvio’s Pizza Rustica



NEW HAVEN, Conn. (WTNH) — If you need to make something quick and satisfying for your family or for guests coming over during the holiday season, this is the dish to make!  It’s impressive and inexpensive to make.

 Chef Silvio’s Pizza Rustica


  • 3 large eggs, lightly beaten
  • 2/3 cup grated parmigiana cheese
  • 1/3 cup heavy cream
  • 1 tablespoon chopped fresh Italian parsley
  • Salt and freshly ground pepper
  • 12 ounces cooked spaghetti, cold
  • 2 tablespoons butter
  • About ½ cup plain dry bread crumbs


In a bowl, beat the eggs, cheese, cream, parsley, and salt and pepper to taste until well combined.  Stir in the spaghetti, then set aside.  Place the butter in a non-stick baking pan or a deep pie tin, melt the butter in a 450-degree oven, and spread over the pan bottom.   Pour the spaghetti mixture into the buttered pan, spread evenly, and sprinkle lightly with bread crumbs for color.  Bake at 450-degrees for approximately 8 to 10 minutes, or until it is firm and golden.  Cut into as many pieces as you like.  Serve hot or refrigerate and serve cold over the next few days.  Either way is delicious!
