(WTNH)- Chef Angela Baldanza whips up a healthy meal filled with protein and vegetables. It also has a vegetarian option.
Mediterranean Power PLAYte
3 c of zucchini spaghetti
2 large rainbow carrots cut in thin slices on the bias
1 watermelon radish cut in 1/2 and thinly sliced
1/2 of a red onion sliced thin
1 cup of cherry tomato sliced in 1/2
2 chicken breasts shredded by hand or sliced in long strips
1/4 c of extra Virgin olive oil
1 lemon juiced
Salt and pepper to taste
Combine all ingredients in a mixing bowl. whisk Separately The olive oil and lemon juice until combined. Add to the ingredients and toss until all are coated. Add salt and pepper to taste and top with Hummus.
Vegetarian Power PLAYte
1 head of rainbow Swiss chard chopped into 1″ pieces
1/2c of red onion diced
1 cup of cooked red Quinoa
1large rainbow carrot cut on the bias
1 cup of portobello or cremini mushrooms sliced thin
2 poached or hard boiled eggs
Salt and pepper
Prepare quinoa according to directions on box. Sauté the rainbow Swiss chard for 3 min in olive oil and onion do not over cook.
Combine all ingredients in a large mixing bowl and toss. Top with the eggs of choice
