Paleo Muffins with Chef David from The Tea Kettle

NEW HAVEN, Conn. (WTNH) – This morning head chef from The Tea Kettle, David Ciastko, stopped by our studio to share a fall favorite recipe and talk about the restaurant’s new “Gourmet To-Go.”

Paleo Muffin Recipe:

3 bananas

1/4 sea salt


1 large organic egg


2 cups almond flour

1 1/4 tsp baking soda


1 tbs agave or honey

4 tb clarified butter

Zucchini Muffin Add:

shredded zucchini skin

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup chopped walnuts

Blueberry Poppy Seed Lemon Zesty Add:

1 lemon zested

1 fresh lemon juice

1/2 tsp poppy seed

1/2 cup fresh bluberries

Bake on low 350 degrees for 30 minutes.
