8 Minute Meals: Grilled Fish Tacos

(WTNH)-John Brescio, owner and Executive Chef of Liv’s Oyster Bar and Liv’s Shack in Old Saybrook shows us how to make grilled fish tacos.

Grilled Fish Tacos

Makes 8 Tacos

1 lb Firm Fish (Such as, Mahi, Tuna, Swordfish, Bass)

8 6” Flour Tortillas

14 oz Bag Cole Slaw

¼ Cup Chipotle Mayonnaise

1 Cup Pico De Gallo (See Recipe)

1/3 Cup Sour Cream

1 Tbls Lime Juice

Salt & Pepper

  1. Cut Fish into 2 oz. strips, Season with salt & pepper
  2. Mix Cole Slaw with Chipotle Mayonnaise
  3. Mix Sour Cream with Lime Juice and Season with salt & pepper
  4. Heat a grill or sauté pan, if using a saute pan add I tbls of vegetable oil until just

starting to smoke.

  1. Add fish and cook on all sides about 2 minutes total. (If using tuna, just sear the outside and leave the Tuna rare)
  2. Toast the Tortillas until slightly browned, ( about 10 seconds per side)
  3. To assemble, put some cole slaw in the center of the tortillas, add the fish, and top with some Pico de Gallo, finish with the lime sour cream

Pico De Gallo

1 Cup Diced Fresh Tomatoes

½ small onion diced fine

½ fresh Jalapeno Pepper seeded and diced fine

1 tbls Chopped Cilantro

1 tbls Lime Juice

Salt & Pepper

 

Combine all ingredients
