Thai Salmon Lettuce Wraps
2 tbs scallions chopped
2 tbs lemongrass chopped
1 tbs mint leaf
1 tbs kaffir lime leaf chopped
1 tbs chopped fresh garlic
a dash of chopped Thai hot pepper to your taste.
1 tsp. chili paste
1 tbs fish sauce
1 tbs limejuice
1 tbs red onion
2 tbs sliced pineapple
Sushi grade raw salmon sliced thin
Sliced white radish
Mix your dressing ingredients in a large bowl. Prepare your iceberg lettuce by cutting them into cups to hold your ingredients. Place your sliced salmon, carrot and white radish in your lettuce cups. Drizzle your dressing on top to taste.
