In the Bender Kitchen: Olde Mistick Village-Pink Basil

NEW HAVEN, Conn. (WTNH) — From Pink Basil at Olde Mistick Village we have Chef Tai, owner and Jean Mchael Coronado, Chef’s Assistant.

This is part of the Cooking with Raw Foods Series at Olde Mistick Village.


Thai Salmon Lettuce Wraps



2 tbs scallions chopped

2 tbs lemongrass chopped

1 tbs mint leaf

1 tbs kaffir lime leaf chopped

1 tbs chopped fresh garlic

a dash of chopped Thai hot pepper to your taste.

1 tsp. chili paste

1 tbs fish sauce

1 tbs limejuice

1 tbs red onion

2 tbs sliced pineapple

Sushi grade raw salmon sliced thin

Sliced white radish

Sliced carrots

Iceberg lettuce

Mix your dressing ingredients in a large bowl.  Prepare your iceberg lettuce by cutting them into cups to hold your ingredients.  Place your sliced salmon, carrot and white radish in your lettuce cups.  Drizzle your dressing on top to taste.
