8 Minute Meals: Whole Wheat Pumpkin Yogurt Loaf

(WTNH)-Kelsey Banfield makes an easy, lightened up pumpkin loaf.


(makes two loaves)

1 C whole wheat flour

2 C all-purpose flour

1 teaspoon baking soda

1 1/2 teaspoons baking powder

1 teaspoon salt

2 teaspoons pumpkin pie spice

3 large eggs

1 (15 ounce) can pumpkin puree

1/2 cup vegetable oil

1 teaspoon vanilla extract

1/2 C packed light brown sugar

1 1/2 C sugar

3/4 C plain Green Yogurt


  1. Preheat oven to 350. Butter two loaf pans.
  2. Combine flour, baking soda, baking powder, salt, and spice. Set aside. In a smaller bowl, combine beaten eggs, then add pumpkin, oil, vanilla, suagrs, and yogurt. Fold wet mixture into flour mixture and stir until smooth.
  3. Divide batter between two loaf pans and bake 55 to 60 minutes.
