Dave Ciastko has been serving up breakfast delights along the shoreline for over six years at the Tea Kettle in Old Saybrook.
“Over 20 years, so it’s just nonstop, just doing what I enjoy, what I have a passion for. It’s really nice. We have 26 different pancakes. People come from all over the place. I have people who meet here from New York and Boston and use this as their meeting area,” said Ciastko.
Now he’s branched off and opened Tea Kettle Gourmet to go right next door!
“My concept is Paleo, gluten free and organic. Now here they can come and grab it to go. It’s easy. Families with kids, they come in and grab a few things and they go. The unique thing about it is we actually have containers that you can put in the oven or in the microwave,” said Ciastko.
So everyone already knows about gluten-free, but why is Paleo so important?
“So Paleo is basically dairy-free, grain-free and it’s also gluten-free. So it works for the people that have Celiac. And for people that are healthy, who work out and do CrossFit or exercise. It’s high fat content and high protein,” said Ciastko.
Ciastko even whipped up his popular Tea Kettle Paleo pancakes.
“It’s a little dense, but we’re using corn flour and tapioca flour, and a bunch of eggs,” said Ciastko.
And boy were they good! I think it tastes a heck of a lot better than a normal pancake. But we haven’t tried their regular pancakes, so we’ll have to come back and try them in a different segment.
