8 Minute Meals: chicken (or turkey) soup

(WTNH) — Healthy Living Expert Margaret Marshall shows News 8 how to make a chicken soup that you can also substitute with Thanksgiving leftovers.

Margaret says you can use cooked chicken, or leftover Thanksgiving turkey.

1 Box Chicken broth
1 to 2 cups water
1 bottle cooking sherry
1 small can jellied cranberry sauce
Salt and pepper to taste
Poultry seasoning to taste

Place cooked chicken or turkey into broth
1 head of celery
1 bunch of carrots
1 large onion
4 potatoes

Let simmer until vegetables are cooked.
Useful with leftovers from Thanksgiving. Healthy to eat for the hectic upcoming holiday weeks.
