In the Bender Kitchen: Hilton Hartford M&M Bistro

NEW HAVEN, Conn. (WTNH) — We have Executive Chef, Shane Arnold from M&M Bistro at the Hilton Hartford with delicious recipe.

Frenched Bistro Chicken

Ingredients:

1ea   12oz Airline chicken breast

Pinch  rotisserie chicken seasoning

4oz   garlic boursin whipped potatoes

4ea   roasted baby carrots

2oz  apple cider & honey reduction

1ea  lemon slice

Pinch  micro greens

  • Season chicken with the rotisserie chicken seasoning
  • In sauté pan with a little oil sear the chicken skin side down until golden
  • Flip the chicken and place pan in the oven cook to 165 degrees
  • Drizzle the plate with balsamic glaze
  • Place the blanched carrots on a sizzler platter with salt pepper and butter and roast in the oven
  • Place warm potatoes on the center of the plate
  • Top with cooked chicken
  • Place 2 carrots on each side of the plate
  • Deglaze the chicken pan with the apple cider homey mixture and 1 tbsp butter
  • Pour sauce over the chicken
  • Garnish with lemon and micro greens

Boursin whipped potatoes

1cup  mash potatoes

2tbsp   boursin cheese

  • Combine all ingredients in bowl and reheat
