In the Bender Kitchen: St. Vincent’s Medical Center with Healthy Super Bowl Snacks

NEW HAVEN, Conn. (WTNH) — Get some healthy snack ideas for the big game!

We are joined by Registered Dietitian, Frankie Maderia with some delicious recipes.

She will be making Healthy Crockpot Buffalo Dip and Cowboy Caviar.

Healthy Crockpot Buffalo Chicken Dip

Ingredients:

1 (8 ounce) block of reduced fat cream cheese (cut into cubes)

3 cups shredded cooked chicken (or one rotisserie chicken)

2 cups shredded part-skim mozzarella cheese

1 cup hot sauce (Frank’s Red Hot)

1 cup plain Greek yogurt

½ cup thinly-sliced green onions (about 3)

Directions:

Spray the inside of your slow cooker with cooking spray or place a crockpot liner inside.

Add all ingredients to the crockpot and stir until mixed.

Cook on high for 1.5-2 hours on HIGH or until all the cheese has melted.

OR cook for 3-4 hours on LOW or until all the cheese has melted.

Stir the contents after desired cook time, transfer to serving bowl and enjoy.

Cowboy Caviar:

12 servings

Ingredients:

1 pint of cherry tomatoes, washed and diced

1 (15 ounce) can of black beans, drained and rinsed thoroughly

1 (11 ounce) can of sweet corn

1 medium red onion, diced

1 whole red bell pepper, diced

1 whole green pepper, diced

1 whole orange or yellow pepper, diced

½ cup cilantro, chopped

½ cup olive oil

1 tablespoon onion powder

1 tablespoon Italian seasoning

Pepper to taste

Juice from one lime

(Optional item: 1 whole avocado, chopped)

Directions:

Place all prepared items into a large bowl, mix with wooden spoon. Add additional seasonings to taste.

Refrigerate for 1 hour prior to serving, serve cold.
