In the Bender Kitchen: The Cafe at Middlebury Consignment

NEW HAVEN, Conn. (WTNH) —  Check out the Valentine’s Day Specials that will be featured at The Cafe at Middlebury Consignment.

They are expanding the Cafe. All the amazing food you have come to expect at the Cafe just got better. They are opening a new restaurant: Vyne Restaurant and Bar which will have expanded hours, which features an expanded gorgeous new dining room, a bar and new bar menu, a chefs table experience and more. Look for Vyne later this spring!

Crab Stuffed Artichoke Hearts w/ Alfredo Sauce

(Serves 12)

24 whole cooked artichokes sliced on bottom so they stand

4 T butter

1/3 C finely chopped onion

1/3 C finely chopped celery

1/3 C finely chopped bell pepper

2 tsp minced garlic

1 pound lump crab meat

Approximately 2 C fresh bread crumbs

1 egg

Mayonnaise to bind

3 T chopped fresh basil

Salt and pepper to taste

Grated Parmesan or Asiago and chopped parsley for topping

Saute vegetables in butter until cooked through. Toss with rest of ingredients.

Gently form opening in artichoke and fill with stuffing. Top with cheese. Place on parchment lined sheet pan. Bake 375 until heated through and lightly browned. Drizzle with Alfredo Sauce before serving.

Alfredo Sauce

Olive oil

2 C heavy cream

1 C half and half

3 crushed garlic cloves

3 C grated parmesan (more if you like your sauce thick)

Ground black pepper

Heat oil in pan and add the garlic as well as both the heavy cream and the half and half. Whisk in the cheese and heat just until cheese melts and sauce thickens.  Add black pepper and enjoy!
