Sweet Maria’s chocolate cheesecake cupcakes

(WTNH) — Maria Bruschino Sanchez of Sweet Maria’s makes the perfect Valentine’s Day treat: chocolate cheesecake cupcakes.

Recipe makes 12 cupcakes


1 1/2 cups graham cracker crumbs

½ cup sugar

1/4 cup cocoa powder

8 tablespoons butter, melted


1 pound cream cheese, room temperature

1/2 cup sugar

2 tablespoons flour

2 eggs

1 egg yolk

1/4 cup heavy cream

1 cup semi sweet chocolate chips, melted and cooled slightly


1. Preheat oven to 350 ℉

2. Make crust. In a small bowl, combine graham cracker crumbs, sugar and cocoa. Add butter and mix well. Line a cupcake pan with paper liners. Press crust into paper liners. Bake 5 minutes. Remove from oven and cool.

3. Mix cheesecake. In the bowl of a stand mixer, (or with hand mixer), beat cream cheese, sugar and flour until light in texture and smooth. Gradually add eggs and egg yolk. Mix just until blended. Add heavy cream. Stir in melted chocolate.

4. Pour batter into prepared crust. Bake 25 to 30 minutes or just until centers are set. Remove pan from the oven and cool cheesecakes in pan on wire cooling rack. Cool completely.

5. Refrigerate 1 to 2 hours or overnight. Garnish as desired.
